Butter bean dip

We’ve worked our way around New Zealand in a tent and are spending are last few weeks in a house. This means we have a kitchen and all our old gadgets. With this in mind we decided to get the blender out and make a dip. Our first thought was to whip up a houmous but the unthinkable happened: we had run out of chickpeas. We searched for something else we could use to make a dip from and so was born this tasty combination.





2 cloves garlic

1x2cm of ginger

half a chilli

1 teaspoon of lemon juice

1 teaspoon of peanut butter

1 tin of butter beans

1 tablespoon of  chopped coriander



Thinly slice the garlic and ginger and fry for 1 minute

Add the butter beans and fry for another minute

Add the coriander and stir in before adding all the other ingredients

Mix together and blend
