Sweet Potato Peanut Burger

It’s not very seasonal for those in the UK but here in New Zealand it’s barbecue weather. Luckily these will work out just as well under the grill.  It’s the first time I’ve made a burger with peanuts and it was delicious.

The finished product with roasted peppers and chilli sauce

Serves 5


1 large sweet potato

1 tin of brown lentils

70g chopped peanuts

4tbs bread crumbs

2tbs oil

handful of fresh coriander

salt and pepper



Cut the sweet potato into small pieces and boil for 15 minutes

Mash the potato and add the tin of lentils

Add the peanuts, bread crumbs,oil and coriander and mash together

Add salt and pepper to taste then shape into burgers

Cook them under the grill or on the barbecue for  minutes on each side
