Potato Bake

We are currently on the road traveling around the north island of New Zealand. We will be back in the UK in 6 months but in the mean time we will be blogging some food that we make along the way.

This is one we made on a gas barbecue  with a lid that allowed us to bake the potatoes.

Ingredients

5 potatoes thinly sliced

4 garlic cloves finely chopped

1 large onion diced

1 yellow pepper diced

fresh parsley chopped

150ml soy milk

2 tablespoons of nutritional yeast

Potato Bake with grilled tofu, barbecued asparagus and salad

Method

Par boil the potatoes for 10 minutes

Fry onion for around 3 minutes until they are soft and then add the garlic and pepper and fry for an additional 2 minutes

Layer the potatoes, onion garlic pepper and parsley in an oven proof dish and pour soy milk evenly over the top.

Bake at 180 degrees for 15 to 20 minutes until potatoes are soft.
